INGREDIENTS:
1 1/2 cup Almond Meal/Flour (+1-2 extra tablespoons for thickening if needed)
1 tbsp shredded coconut (plus 1 extra tbsp for coating)
1 tbsp ground flax
1/4 cup freshly squeezed lemon juice
zest from 1 lemon
2 tbsp honey (or maple syrup)
1/4 cup organic coconut oil
1 tsp vanilla extract
1/4 tsp Himalayan Pink Salt
INSTRUCTIONS:
Combine these ingredients in a large mixing bowl. With clean hands, form small bites (approximately 1.5 inches in diameter).
